Our son had a birthday party to attend this weekend so we decided to put a new spin on a old cookie recipe. I used my Sunbutter® Thumbprint Cookie recipe and made a few tweaks. Check it out.
I made the traditional recipe and I also made a chocolate version. I chopped an Enjoy Life chocolate bar into large chunks and added it to the center of the cookie in place of the preserves.
I also had leftover cookie dough and decided to toss some Enjoy Life Seed & Fruit Mix into the mix. I kept these cookies in a ball shape when cooking. They came out a little dry and crumbly. I’ll need to add more wet ingredients to this one…so back to the drawing board it goes.
Of all three cookies, I think he seems to like the chocolate version the best. The regular Thumbprint Cookies comes in at a close second though.
Oh! He also had a blast at the birthday party!

Do you bake it more after putting the chocolate on top? If not, how long total to back them before pulling out to put the chocolate on?
