Who doesn’t love banana bread?

That’s probably why this recipe is such a hit in my house.
You may remember the other banana bread recipe that I shared. Both recipes have no dairy, no soy, no egg, and no nuts. However, this recipe is a little different. It comes out very moist where the other recipe comes out more like sandwich bread.

I prefer to make banana bread into muffins, instead of bread. This way I can make a double or triple batch and freeze them. I either take a few out at night so they are thawed by morning, or I take one out as needed and pop it in the microwave for 20 seconds.
