I made this dairy and egg free Easy Broccoli Salad as a side dish for Easter this year. I wanted something simple that I could make the night before that didn’t need a stove or oven to reheat later. The biggest problem that I had with this recipe is that it was so easy that I completely forgot about it and never put it out for dinner! DOH! Lucky for us we were able to eat it for lunch and dinner for a few days without complaints.
Of course if I could look into the future and know ahead of time that I would forget putting the entire dish out on Easter I would have saved myself the next day shipping charge. Oh well…
This salad uses red onion, which I normally avoid at all cost because I HATE the way it makes my breath smell. However if you make this dish the day before it’s needed, the oniony smell fades dramatically. Love that!
Did I mention that there’s bacon in this Easy Broccoli Salad?
Yes!!! Who doesn’t LOVE bacon? It may just be one of my biggest weaknesses. I make each morning for my youngest for breakfast. He needs that added fat and protein in his diet, BUT I SURE AS HECK DON’T! Seriously! The will power that it takes to not have a slice, or a bite, or three of bacon is insane! Some days I am successful, and others…well… I’m only human.
Now onto the recipe…
Easy Broccoli Salad
- 1/2 cup egg free mayo
- 3 Tbsp sugar
- 1 Tbsp red wine vinegar
- 1 head of broccoli, washed and cut into small pieces
- 4 pieces of bacon, cooked and crumbled
- 1/4 cup sunflower seeds
- 1/2 red onion, chopped
- 1/4 cup raisin or dried cranberries, soaked in hot water for 10 minutes and drained
- Whisk the first three ingredients in a small bowl.
- Combine all of the ingredients in a large bowl or resealable plastic bag. For best results allow it to soak overnight.
That’s it!!! Easy, right????
