|Easy way to cook bacon!|
That seems to be the question of the day, about three times a day to be exact. At breakfast my little allergy guy comes into the kitchen with his nose in the air sniffing “Mama, what’s that smell? Is that bacon?” For those of you who have seen that Beggin Strips commercial with the dogs running through the house saying “I smell BACON…bacon, bacon, bacon, bacon!”
Well, that’s basically what my son does about three to four times a week. He needs the extra fat and protein that bacon provides. He also LOVES it.
I got sick of cooking it in a pan with all the mess. So I bought one of those microwave bacon cooker things (Makin Bacon) and I absolutely love it! It can hold 12 pieces at a time and allows me to step away and make his morning shake. I posted the recipe I use for his shakes. Recently he’s been preferring a banana peach oatmeal shake. Yum! I’m pretty happy if he has his entire shake and a serving of bacon. I pack so much fruit and vitamins in that shake I’d probably be happy with him eating dirt… okay, maybe not that extreme but you get the point. 😉
Lunch time comes pretty quickly. Our son usually has leftovers from dinner before, a wrap, soup, cracker sandwiches, pasta, or a burger. I try to make lunch my easy meal of the day that doesn’t require too much thought, cooking or clean up. I already feel like I spend over thirty hours a week creating recipes, planning meals, buying the food, preparing and cooking and don’t forget the clean up! Lucky for me Jamie (my husband) grew up in the restaurant business and doesn’t get scared of a sink full of dishes!
Dinner Time!! That’s where things tend to get messy! I make dinner every night, from scratch, with whole foods, completely allergy free for the entire family. Okay, okay, I’m not wonder woman..I probably order out once or twice a month. But our son always has a healthy allergy free meal since ordering out just can’t be done for him. What I have found is making at least three or four easy meals a week makes things easier on me and gives me enough of a break in between that I don’t mind doing three “tough” meals. You know the ones that leave the kitchen inside out and upside down but the taste of the meal is totally worth it? There really is nothing better as an allergy Mom to make something new and see the faces of your family light up with yummy deliciousness that yes…YES!!! we have found yet another recipe to add to the rotation!
Desserts O how I love thee! Probably the most fun to make but the hardest to perfect. I can’t tell you how many cakes and cookies I have made that my boys wouldn’t eat. That’s a tough pill to swallow. Taking the time and energy to research a recipe, tweak it, buy it, cook it…to have it come out like..crap ! I have made cookies that would break a tooth and cakes that would probably bounce had I thrown them to the ground. Lucky for my boys, I’m stubborn and determined (not so lucky for my husband). I will try, and try, and try again to find that yummy recipe so that my son can feel somewhat “normal” (whatever THAT is).
