RECIPE: Super Easy Allergy Free Meals

I cook an allergy free dinner every night, from scratch, using whole foods.  Okay, maybe not EVERY night…but at least 27 days out of every month.  Some nights I go by a recipe with a ton of ingredients that takes what seems like forever to make.  Other nights I want something super simple, which means quick and easy to make and easy to clean up.  The super easy meals are convenient on nights the kids have extra curricular activities or when I’m just plain tired!

Lately my healthy, super easy meals consist of a meat/fish, veggie and a starch.

Starch – start with this first, it takes the longest to cook
Rice or Quinoa – in the rice cooker (fix it and forget it) The rice and quinoa take 30 minutes in the rice cooker. (hint: every night take 2 tablespoons of raw veggies that you’re cooking that night and chop, put in small resealable bag. Continue to do so each night adding to the same bag. By day 3 you have a small bunch of veggies to toss in the rice cooker with your rice or quinoa). 

Roasted Potatoes – The potatoes are just cubed, rinsed and tossed with oil and seasonings and roasted in oven at 400 degrees for about 30 minutes.

Fish/Meat
I just shake the meat inside a ziplock with olive oil and seasonings and grill in under 15 minutes.
The fish is baked in oven at 400 degrees with oil and seasoning for approx. 20 minutes.

haddock (it’s one of the only fish my husband will actually eat)
grilled chicken – breast, thighs, or drumsticks
grilled pork – chops, or tenderloin
grilled turkey – breast, or tenderloin

Fresh Veggie
Steamed in microwave
OR
fresh salad

Microwaving my veggies is just a super easy and fast way to steam.  It really requires no thinking.  I made the following spreadsheet for my own reference one night.  I tape it to the inside of one of my cabinets in my kitchen.  It shows the cooking time and method for each vegetable that I would consider microwaving.  The cooking time is based on my microwave, so adjustments may be needed for your own.  Feel free to add any type of seasoning and oils to your veggies once they’re cooked.
