I haven’t been very good at making menu’s for dinner lately. I’ve just been grabbing a bunch of veggies and meats and throwing something together. It’s actually been working out pretty well so far (knock on wood). Last night I jumped on allrecipes.com to look for a sausage recipe that I could make allergy free. I get so many fantastic ideas from that site…LOVE IT!
I found a sausage recipe that I was willing to try. It got some good reviews but I was pretty skeptical that my family would like it. The only ingredients needed were: sausage, peppers, onions, potatoes, olive oil, white wine, chicken stock, italian seasoning, salt, and pepper. I had all the ingredients, it looked simple, and it was allergy free (for us). So what the heck! I gave it a shot.
I decided to make Sausage, Peppers, Onions, and Potato Bake and boy am I glad I did! My husband and I loved it! My four year old allergy child loved it! My soon to be ten year old with no allergies didn’t love it. He just picked out the onions, peppers, and sausage…sigh… Oh well, you can’t please them all.
This is an allergy free dinner that I will keep in our rotation…if I ever make a rotation…
