RECIPE: Cookie Recipe, Tweaked

June 4, 2012 by Elizabeth DiBurro 4 Comments

Allergy Free Cookies

Our son had a birthday party to attend this weekend so we decided to put a new spin on a old cookie recipe.  I used my Sunbutter® Thumbprint Cookie recipe and made a few tweaks.  Check it out.

I made the traditional recipe and I also made a chocolate version.  I chopped an Enjoy Life chocolate bar into large chunks and added it to the center of the cookie in place of the preserves.

I also had leftover cookie dough and decided to toss some Enjoy Life Seed & Fruit Mix into the mix.  I kept these cookies in a ball shape when cooking.  They came out a little dry and crumbly.  I’ll need to add more wet ingredients to this one…so back to the drawing board it goes.

Of all three cookies, I think he seems to like the chocolate version the best.  The regular Thumbprint Cookies comes in at a close second though.

Oh! He also had a blast at the birthday party!
But you can’t really tell from this picture… 😉

Do you bake it more after putting the chocolate on top? If not, how long total to back them before pulling out to put the chocolate on?

Yes, I bake it again just like the Thumbprint cookies. If you follow this recipe but use chocolate instead of jelly, it’ll work great! https://www.eblfoodallergies.com/2011/12/recipe-sunbutter-thumbprint-cookies.html
