This is definitely my son’s favorite meal. I made triple batches and freeze them for nights that I don’t feel like cooking. They defrost really well in the microwave and I pop them in the toaster oven for a minute or two to crisp up a bit. Yum.
I cook up my recipe for Chicken Parmless and allow it to cool on a cutting board while I make the pizza dough. It also works really well to make Chicken Parmless for dinner the night before and just make extra for the pizza. That way you’re only making one mess.

The pizza dough recipe comes straight from Colette Martin’s Learning to Bake Allergen-Free which I would recommend to anyone who is avoiding the top 8 allergens. As you can see in the picture, it’s a thinner crispy type of crust. I’ve been attempting to make my own recipe that is softer but it’s still not quite ready to share yet. You’ll be the first to know when it is!
