The perfect salsa to jazz up grilled chicken, steak, or pork. Also use it as a healthy appetizer and scoop it up with tortilla chips.
-1 can pineapple rings
-1 red pepper, diced
-1/2 red onion, diced and rinsed
-1 avocado, cubed
-1/4 cup cilantro
-1 lime, juiced
-1/4 tsp salt
-1 Tbsp honey (optional for a sweeter version)
Grill the pineapple rings over medium heat, 3 minutes each side.
Toss the pineapple with the remaining ingredients. (I like to rinse the red onion after I dice it to decrease the flavor a little. My little guys are more likely to eat it that way.)
