Creamy Fish Chowder, #dairyfree #glutenfree

My family loves chowder.  Maybe it’s because we’re from New England?  Not really sure, but I finally decided to make an allergy-friendly fish chowder so that my youngest son could try it for the first time.  It needed to be dairy free, gluten free, soy free, wheat free, nut free, and garlic free (phew) for us all to enjoy it.  I think it turned out pretty darn good and judging by the empty bowls on the table the rest of my family did too!

I couldn’t make up my mind on whether I wanted to create a clam chowder or a fish chowder, so I did both.  You could easily make this recipe using all fish or two cans of chopped clams for a clam chowder.  You can also omit the shredded carrot, which would make it into a white chowder not the color you see in the picture above.  I went back and forth on using and not using the carrot and decided to add it in.  Next time I make this chowder I’ll omit the carrot and bacon and add only fish and see if it makes a difference in the taste.  It’ll definitely be easier to cook that’s for sure!

Creamy Fish Chowder

Ingredients:

4 slices of bacon, cut into 1″ pieces
1/4 cup oil
1 onion, chopped
1/4 cup gluten free all purpose flour
1 small carrot, shredded
salt and pepper
4 cups safe milk (I used rice milk)
4 medium size potatoes, peeled and cubed
1 can clams, chopped
1 lb. white fish (I used haddock)

Directions:

  1. In a dutch oven cook bacon over medium heat.  When done place bacon aside for later and discard the bacon grease.
  2. Cook onion in oil over medium heat for approx 5 minutes.
  3. Slowly stir in flour, mixing constantly. Also add the shredded carrot.
  4. Very slowly add the rice milk while stirring constantly.  Turn heat down to a low simmer once the mixture starts to boil.
  5. Add potatoes and simmer for approx 15 minutes.  You’ll notice the mixture start to thicken.
  6. Taste the mixture and add salt and pepper until the taste is how you prefer it.
  7. Add the can of chopped clams (the juice too), the cooked bacon and the fish and continue to simmer, stirring occasionally.
  8. Give it a final taste test and add salt and pepper, if needed.
