I created a No Bake Protein Bars recipe for SunButter’s Blog that is perfect for packing into lunch boxes. I was able to create three different flavors in one batch to add variety to one recipe; chocolate drizzle, cranberry chocolate and seed and dried fruit mix blend. My son likes the cranberry chocolate flavor the best!
I’ll let you in on a little secret… Any time I bake anything, I freeze half of the batch. It doesn’t matter if we love the recipe and could eat it in one sitting. I always freeze half of the batch! What do I do with all do those safe frozen treats? Pack them into lunch boxes of course! I make my son’s lunch the night before school and use one frozen treat, which thaws overnight and is perfect for snacking on in school. I even freeze the treats that didn’t turn out so well the first time around. You’d be amazed how you can transform a not-so-great recipe into a winner just by dunking it in chocolate and offering it again later.
This recipe is almost too good to be true. It uses only 1 bowl, 1 pan and 1 spoon, which makes clean up a breeze! It’s also very allergy friendly being free of dairy, egg, nuts, wheat, gluten and all the other top 8 allergens. Did I also mention that it requires no oven, stovetop, or mixer? That’s right…this is a microwave recipe!
