These easy-to-make Dairy Free Lemon Cookies are also vegan, made without eggs, soy and nuts, and are perfect for those with diet restrictions and food allergies. The sweet lemon glaze really compliments the light and airy cookie.
Keeping the cookies free of artificial dyes was important to me for this recipe. For those of you who prefer more color, add a drop or two of yellow food dye into the glaze mixture and you have yourself a touch of color. Colored sprinkles can also be added to the top of the glaze, but make sure to add them soon after glazing. Otherwise the glaze will harden and the sprinkles will fall off.
Dairy Free Lemon Cookies
Makes 24 cookies
Cookie Ingredients:
- 1/2 cup powdered sugar
- 1 cup safe buttery sticks, softened
- 1 3/4 cup flour, spooned and level
- 1/4 cup cornstarch
- 1T lemon zest (2 lemons)
- 1tsp vanilla extract
Glaze Ingredients:
- 1/2 cup powdered sugar
- 1T lemon juice (from the lemons used for zesting)
- 1 drop of yellow food dye (optional)
Directions:
- Heat oven 350 degrees.
- Beat 1/2 cup powdered sugar and buttery spread with an electric mixer until well blended.
- Add flour, cornstarch, lemon zest and vanilla and continue mixing until fluffy.
- Shape the dough into balls and place on cookie sheet about one inch apart.
- Cook for 8-10 minutes and allow to cool for 2 minutes before moving to a wire rack.
- Using a hand mixer combine 1/2 cup powdered sugar and lemon juice until well blended and 1 drop of optional food dye. Add more liquid if the glaze is too thick, and add more sugar if the glaze is too thin.
- Spread a small amount of glaze on each cookie.
