Easy Ice Cream Cake Recipe – Allergy Friendly

I had no idea this cake was going to be so popular!  It is SO easy to make because there is no baking, no oven, no cooking at all.  It is dairy-free, egg-free, peanut-free, and still super delicious (and EASY).  If I had known it was going to be so popular with you all, I would have taken more pictures.  I guess I’ll just have to make it again.  🙂
I want to try this Easy Ice Cream Cake Recipe - Allergy-Friendly

I made the cake because my older son (who has no allergies) requested an ice cream cake for his birthday (the big 13, can’t even believe he’s a teenager!).  Any time we have a cake that my son can’t have I try to make a similar allergy-friendly one for him.  This recipe is so easy that I’m secretly hoping that everyone wants an ice cream cake for their birthday!

Ingredients:

  • 1/2 a pint of So Delicious Dairy Free Chocolate Coconut Frozen Desert
  • 1/2 a pint of So Delicious Dairy Free Vanilla Bean Frozen Desert
  • 4 chocolate Oreos
  • 8 marshmallows
  • 2 Tbsp chocolate chips

Directions:

  1. Leave both pints of ice cream on the counter for approx. 20-30 minutes to soften.
  2. Line a bowl with parchment paper (I used a 16oz. tupperware container).
  3. Spread vanilla ice cream into the parchment lined bowl.
  4. Crumble the oreos on top of the vanilla ice cream.
  5. Spread chocolate ice cream on top of the Oreos.
  6. Top with marshmallows and chocolate chips.
  7. Freeze overnight. 
  8. Take the ice cream cake out of the bowl, unwrap the parchment paper, and slice into servings.
It really doesn’t get much easier than that!!!  Feel free to add any type of toppings, switch out the flavors, and switch out the type of Oreo!  The possibilities are endless!
